Recipe: Very Vanilla Donuts

When living in Norway I loved to bake. Sophia especially loved donuts, and we did a lot of donut baking. The very vanilla donuts were made when we had a visit from our Minnesota cousins. I really wanted to bake them something typical American and donuts seemed perfect. These donuts have real vanilla seeds both in the dough and in the glaze. The dough is made with yeast and set to rise for light and airy donuts. For the recipe: 2 tsp dry yeast 1 cup sugar 1 1/4 cup warm milk 1 stick melted butter 1 tsp vanilla paste 1 tsp cardamom 1 pinch of salt 1 egg 5 1/2 cup of all-purpose flour canola oil for frying round cutters Glaze: 1/3 cup warm milk 1 ts vanilla paste 3 1/2 cups of powdered sugar Heat the milk up first. Triple Chocolate Brownie Cookies

There is nothing better than chocolate, and when you triple the chocolate and combine brownies and cookies, you are basically in chocolate heaven! These cookies are stuffed with chocolate, and just like brownies they have a soft center. The cookies are made with melted chocolate, cocoa and chocolate chips. Here is the recipe. Temperature: 370 F Baking time: 10 minutes You need: 1 1/2 cups brown sugar 1/2 cup white sugar 1 1/2 sticks butter 4 eggs 2 tsp vanilla extract 14 oz melted chocolate (400g) 2 1/2 cups all-purpose flour 2 tsp baking powder 1/2 cup cocoa powder (unsweetened) 5,3 oz chocolate chips (150g) cookie spoon Start by mixing sugar and butter together. Mix it soft. Beat in the vanilla extract and eggs. Mix all the dry ingredients together and beat them in with the melted chocolate. Mix in the chocolate chips in the end. Let the cookie dough stand in the fridge for about 15 minutes. Use a cookie spoon to make scoops of cookie dough. Place them on waxing paper and bake them for about 10 minutes. Recipe: Pavlova

Pavlova is a favourite of ours in the Spring and Summertime. The crispy meringue bottom filled with homemade vanilla custard, whipped cream and fresh berries always tastes good. When making a Pavlova you can always make the meringue bottom and the vanilla custard a day ahead. This way you can easily whip up the cream and decorate with berries before serving. Her is the recipe and how to: Temperatur: 300 F  Baking time: 1 hour Du trenger: 1 1/4 cup sugar (280g) 4 egg whites 1 tsp vanilla extract 1 tsp cream of tartar 1 1/2 cup heavy cream (for whipping) 2 cups vanilla custard (homemade is better) fresh fruits and berries powdered sugar for sprinkling Whip the egg whites together with cream of tartar. As they begin to form tops ad in one and one tablespoon of sugar. Whip it heavy until you have a glossy meringue. Gently whip some vanilla extract into the meringue. Sweet Cinnamon Apple Cake

One thing we sure love for a weekend treat is cake. This apple cake is a sweet cake made with brown sugar and cinnamon for more flavor. The cake is simple made and the batter will only take you about 15 minutes. Here’s the recipe and instructions. For the batter: 1 cup brown sugar (200 g) 4 eggs 2 sticks of butter (226 g) 1 1/2 cup all-purpose flour (170 g) 2 tsp baking powder 2 tsp vanilla extract 4 tbsp low-fat milk 1 apple in slices 2-3 tsp cinnamon 3-4 tbsp brown sugar Set the oven to F* 350 (C* 175). Melt the butter in a small pan. Beat the eggs and brown sugar together in a bowl. Make sure you beat it light and airy. Then in a slow stream stir in the melted butter. Sift in the flour and baking powder together. Stir in the vanilla extract and milk. Beat it all together until you have a smooth batter.
