Recipe: Pavlova

DSC_0100Pavlova is a favourite of ours in the Spring and Summertime. The crispy meringue bottom filled with homemade vanilla custard, whipped cream and fresh berries always tastes good.

DSC_0003When making a Pavlova you can always make the meringue bottom and the vanilla custard a day ahead. This way you can easily whip up the cream and decorate with berries before serving.

Her is the recipe and how to:

Temperatur: 300 F  Baking time: 1 hour

Du trenger:
1 1/4 cup sugar (280g)
4 egg whites
1 tsp vanilla extract
1 tsp cream of tartar

1 1/2 cup heavy cream (for whipping)
2 cups vanilla custard (homemade is better)

fresh fruits and berries
powdered sugar for sprinkling

DSC_0002Whip the egg whites together with cream of tartar. As they begin to form tops ad in one and one tablespoon of sugar.

DSC_0005Whip it heavy until you have a glossy meringue.

DSC_0006Gently whip some vanilla extract into the meringue.

DSC_0004Spread the meringue on to a sheet pan covered with parchment paper. Make either one big or two smaller bottoms. Bake the cake for one hour.  DSC_0002Let the cake cool of. Then fill it with vanilla custard topped with whipped cream, or mix vanilla custard and whipped cream together. Spred it over the meringue.

DSC_0103Ad fresh berries and sprinkle it with powdered sugar. Serve it chilled.
