På seiltur i Karibien

Etter flere uker her på St. Thomas i Karibien har vi også fått utforsket nærliggende øyer og hatt flere flotte opplevelser. Vi har bl.a. fått være med på to flotte båtturer. Vi har seilt med en katamaran og en stor seilbåt. Katamaranen vi seilte med heter Steppin Up og eies av Bill og Michelle. Bill er kaptein mens Michelle lager alt maten. Den store seilbåten har egen kaptein, Kaptein Richard og kokken, Biggi. Yacht charters er veldig populært her i Karibien og en fantastisk måte og oppleve øyene på! Her får du virkelig en uke med massevis av flotte sights, opplevelser og ikke minst frihet. Yacht charter gir deg utrolig mye om du ønsker en all-inclusive ferie. Mat, drikke, håndklær, vannleker, ja, til og med solkrem får du ombord. Det eneste du må ta med deg selv er badetøy. De fleste båtene er stappet med gøyale leker. Sailing on Three Moons

What a great weekend! Memorial Day weekend was very special to us down here on St. Thomas. Saturday we spent most of the day at the beach and on Sunday we were invited by Captain Richard on to the Three Moons. The Three Moons is a 72 ft large monohull sailboat.                                           We started our sail from Water Island. Our goal for the day was Buck Island. (Named after the colonial slave days.) Buck islands were islands where the slave ships would drop of the healthy and strong men before they headed to shore to sell the women and children. There are 17 Buck islands in the Caribbean. Our first stop at Buck Island was Turtle Cove. At Turtle Cove you are almost certain to see turtles. We were very lucky! Recipe: Pavlova

Pavlova is a favourite of ours in the Spring and Summertime. The crispy meringue bottom filled with homemade vanilla custard, whipped cream and fresh berries always tastes good. When making a Pavlova you can always make the meringue bottom and the vanilla custard a day ahead. This way you can easily whip up the cream and decorate with berries before serving. Her is the recipe and how to: Temperatur: 300 F  Baking time: 1 hour Du trenger: 1 1/4 cup sugar (280g) 4 egg whites 1 tsp vanilla extract 1 tsp cream of tartar 1 1/2 cup heavy cream (for whipping) 2 cups vanilla custard (homemade is better) fresh fruits and berries powdered sugar for sprinkling Whip the egg whites together with cream of tartar. As they begin to form tops ad in one and one tablespoon of sugar. Whip it heavy until you have a glossy meringue. Gently whip some vanilla extract into the meringue. Spread the meringue on to a sheet pan covered with parchment paper. Make either one big or two smaller bottoms. Bake the cake …

A day out on Steppin Up

On Saturday we had the pleasure of sailing with the Steppin Up. The Steppin Up is a 43″ large catamaran owned by Capt. Bill and Michelle. Bill and Michelle have been doing charters in the Caribbean since 2012. On Saturday we were invited to come with them on a day sail. Saturday morning we sailed off from the marina and headed over to Christmas Cove. Sophia quickly found her favourite spot on the boat. The big trampolines in front was just perfect for relaxing and bird/ fish watching as we sailed out. As we approached Christmas Cove we were all excited to get into the water. Christmas Cove is a favourite for both Bill and Michelle for night snorkelling. It is also a popular “first” stop when they take guests out on a charter. Sweet Cinnamon Apple Cake

One thing we sure love for a weekend treat is cake. This apple cake is a sweet cake made with brown sugar and cinnamon for more flavor. The cake is simple made and the batter will only take you about 15 minutes. Here’s the recipe and instructions. For the batter: 1 cup brown sugar (200 g) 4 eggs 2 sticks of butter (226 g) 1 1/2 cup all-purpose flour (170 g) 2 tsp baking powder 2 tsp vanilla extract 4 tbsp low-fat milk 1 apple in slices 2-3 tsp cinnamon 3-4 tbsp brown sugar Set the oven to F* 350 (C* 175). Melt the butter in a small pan. Beat the eggs and brown sugar together in a bowl. Make sure you beat it light and airy. Then in a slow stream stir in the melted butter. Sift in the flour and baking powder together. Stir in the vanilla extract and milk. Beat it all together until you have a smooth batter. Pour the batter in a round non-stick or parchment lined pan (9 inches or larger). …

Karneval!

Karibien blir ofte assosiert med sterke farger og fengende rytmer. Forrige helg var det karneval her på St. Thomas. Da er det flere dager med massevis av farger og musikk. Det er festligheter fra morgen til kveld. Det hele startet med en matfestival på onsdagen. Her var det mye å velge mellom! Vi prøvde en lokal kyllingrett med mai, en form for søtpotetmos og ris med bønner. Det var kjempe godt! Porsjonene er dog veldig store og Øystein, Sophia og jeg delte en porsjon mellom oss. Det er også stort marked under matfestivalen og man får kjøpt lokale produkter fra bøndene på øya her. Både planter, urter, grønnsaker, frukt, egg, honning og “hot sauce” finner du i bodene på markedet. Karnevalet har fokus på lokale tradisjoner og det er mange opptredener med både sang, dans og musikk. “Steel bands” er stort her nede og de karibiske rytmene høres over hele byen under karnevalet. Fredagen er barnas dag med egen barneparade. Barn i alle aldre danser seg over brosteinen i Charlotte Amalie. Lørdagen er har den …

CARNIVAL!

The first weekend of May held the annual St. Thomas Carnival. This is a great festival filled with fun, colors and music from morning until late night. On Wednesday there is a food fair with tons of flavors, Friday is the children’s parade and Saturday is the big day with the adult parade ending with fireworks at Waterfront. The market place is filled up with people, both tourists and locals.There is a lot happening all the time; music, dancing… You really get to see some of the local traditions. The children’s parade is great fun to watch! Look at that head piece! What to eat? Try out some local juices and food! Definitely get a Johnny Cake and some Passion Juice. Eat baked Tamarinds for dessert. When to be there? Go to the food fair on Wednesday around noon. For the Children’s Parade and the adult parade on Friday and Saturday it’s best to be in town around 11.00 am. The carnival village with rides, bars, fast food etc. usually opens around 6 pm every …
